Scoop it up!!



Hope you all are having an amazing Saturday morning! Did you know tonight is a full moon and lunar eclipse?! It's suppose to be beautiful so look up and make a wish tonight! I think my wish will be that I can eat dessert for breakfast everyday! Oh wait…that wish has already come true! Yaaay for Nice Cream! I'll have to keep thinking what I want my next wish to be!  
Seriously though I use to eat soooo much ice-cream growing up but then became lactose intolerant! I think my body just one day was like, "Uhhh you're done Coco!"…and then I cried! So, when I discovered nice cream it was like all was right in the world again! :)

This is my simple banana nice cream recipe which is the base to all my other variations I make. I've also included my strawberry nice cream recipes! I mixed the two for a yummy strawberry banana combo! You can eat this anytime of the day but I love having this for breakfast! It's completely all natural and filled with vitamins, minerals and keeps you full for hours! Make it for your kiddos and they will think they are having dessert for breakfast…little do they know it's all fruit and so healthy for them! 

Banana Nice Cream Recipe:

6 frozen bananas
3 pitted dates
1/4 cup almond milk (or more until desired consistency)

Directions: Blend all ingredient in a food processor or high quality blender until you get creamy soft serve ice-cream consistency. Spoon into container and stick into freezer to harden for at least two hour to make "ice-cream scoops" 

*Coco tip- make sure your bananas are VERY ripe before you freeze them. The more ripe the sweeter the mixture!

Strawberry Nice Cream Recipe:

3 frozen bananas
14 frozen strawberries
3 TB almond milk (or more until creamy consistency)

Directions: Blend all ingredients in food processor or high quality blender. Once all blended spoon into container and put in freezer to harden.

Once the mixtures have hardened you can remove from freezer and scoop! Serve both flavors in a cone or bowl and top with your favorite toppings or eat as is! If you don't want to make into scoops you don't have to freeze mixture and can eat right after blending!

Get some Balance!


I don't know about ya all but one of the biggest things I struggle with in my life is balance! Trying to manage work, family, friends, kids, traveling, health, cleaning, laundry, cooking…k you get the picture! It can become very overwhelming real fast! I know that when I take the time to take care of myself I am becoming the best version of me and the best version for everyone else in my life.  

I really really have loved using Balance essential oil. Somedays I just want to dip my entire body in it! haha It has helped me so much with balancing out my hormones and helping me sleep! When I sleep it's like I'm reborn! When I don't…uhhh watch out! lol It also has helped me manage my stress and anxiety which then helps me feel more balanced and ready to take on the day! 

I apply balance to the inside of my wrists, back of my neck and bottom of my feet.  If I have work off I really love using it in my diffuser at home! It is definitely a staple essential oil! I truly believe in natural healing! I use to take prescriptions for anxiety, stress and sleep and some are very unhealthy, can be addictive and have major side effects.

I am so passionate about natural healing with essential oils because I have seen how much it has help me! I am sharing all my oil tips and plant based diet recipes to help anyone who might be struggling the way I did and wants to try a more natural and healthy approach.  If I can help even one person it makes it all worth it!

Oh yeah ya all! Happy Friday! I am SO excited to share with you one of my favorite places ever and give you all a chance to win a giveaway to try all their deliciousness! Aubergine has soooo many items that I'm obsessed with! There literally isn't one thing I've tried that hasn't blown my mind! They offer healthy, natural, fresh house-made salads, salad dressings, sandwiches, soups, acai/pitaya bowls, smoothies, juices, desserts and pastries without ANY preservatives, sugars or unhealthy fats. Its such a good feeling to be able to eat out and know that no matter what you order off the menu you are getting something that is healthy, nutritious and delicious! I have been lactose intolerant since 2005! Dairy is one of the hardest foods for the human body to digest! However, in the past creamy soup was always a comfort food for me! When I went into Aubergine the first time and realized they had a variety of creamy soups that were dairy free and made "creamy" using tofu and raw cashews I was in heaven! Truly never tasted soups so yummy! 


Does this picture even need an explanation of how delicious it is?! Cocoa Blast Smoothie is a must try! 


I might not dress granola but I definitely eat granola! Probably one of my top ten favorite foods! I just love that you can eat it as a snack or use as topping on acai, pitaya, smoothies or nice creams…. really the possibilities are endless! Like everything else Aubergine makes their granola in house using all natural ingredients! Sugar free and so nutritious! Filled with multi seed blend and gluten-free oats! Heaven!


I might have become obsessed with Pitaya just because it's so pretty! haha Then I tasted it and my obsession turned into full blown true love! lol Their pitaya is raw and 100% pure. It's an amazing source of antioxidants, fiber and vitamins. Eating raw and clean is really so essential to strengthening the immune system and increasing energy! 


Don't ask me how these muffins made it from Utah to Vegas without me eating them all! (I may or may not have eaten all the cookies though) K we all know I ate all the cookies! Don't judge! lol These muffins are amazing!! The Zucchini muffin is my favorite! 


I don't even know where to begin when it comes to talking about Aubergines salads! I could right a 60 page thesis paper on them! The have so many different kinds! You can chopped up all your favorite ingredients to customize your own, make a salad plate or try one of their amazing salad inventions off the menu! 


So, as I said before I brought a ton of cookies with me for my drive back down to Vegas and yes I ate them all! I have a serious sweet tooth and that is NEVER going to go away! You could say I'm somewhat of a dessert snob and I'm very picky about my desserts! A lot of "healthy" desserts are disgusting! (real talk) Lol! So, these cookies are one of my favorite finds! Pecan Date, Almond, Carob Chip…all amazing!

Wild Orange Oil..


Happy Hump day peeps! Wanted to share with ya all one of my favorite oils! It's Wild Orange! There are so many ways to use this oil but I wanted to focus on using it when traveling! Flying and driving can be really draining and exhausting for the mind and body…especially when you are traveling a lot! 

It just starts to wear you down! I know for me after awhile I just feel low energy, physically tired and become more prone to sickness. So I started taking Wild Oil with me during my travels and road trips and it has helped me so much! It really gives me added energy and revitalizes my mind and body! It also protects against harsh environmental and seasonal factors and has amazing immune enhancing benefits to fight off getting sick! Obsessed!!!

Here is how I use Wild Orange:

I add a drop of oil into my water (always drink a lot of water while traveling to decrease bloat and dehydration)

Rub on inside of wrist 

Add a drop to palms of hand and rub in. Bring palms up to face and cup over nose and inhale deeply three times!

Coco & Coconuts :)


My usual obsession of chocolate and peanut butter is taking a back set because I can't get enough of chocolate and coconut right now! (Sorry Peanut butter…I still love you) This nice cream is so delicious and easy to make and the best part is it's soooo good for you! Packed with super food nutrition. It's great for breakfast or really anytime of the day!

Coco & Coconut Nice Cream Recipe:

2 Frozen Bananas
1 Scoop Vegan Chocolate Powder
Coconut water or Almond/Coconut Milk until desired consistency

Blend together in food processor or high quality mixer to get ice-cream like consistency.  Top with raw coconut flakes!

Magic for that time of the month!


I know how we should probably talk about how I need a manicure in a major way but there are more important things to talk about! Like cramps and bloating and serious PMS! We all know that time of the month can be no fun! I have always had very severe cramps and PMS every month since as long as I can remember.  In high school I use to have to stay home from school every month for a couple days because I couldn't even get out of bed because my cramps were so bad! 

So when I started using Clarycalm I literally felt like I had found a miracle! I rub Clarycalm on my stomach and massage it around.  It has helped so much with my cramps and PMS.  I also layer my Clarycalm with Whisper to relax. Clarycalm works really well with heat! So, another great tip is to put a heating pad over your stomach once you apply your oils! I also take Lavender Epsom Salt Baths to help with bloating! It also keeps me calm and helps with my mood and sleep.

Eat Pretty..


Just in case you don't know I'm obsessed with Nice Cream here is another post to let you know I still am!! What's better than getting to eat dessert for breakfast and feel good about it?! It's like I had 3 wishes and this one came true! I'm still waiting for my other two wishes to happen.  So, if you're reading this James Franco yes I want to marry you and travel the world forever! :) But back to this beautiful breakfast! 

Nice Cream is so easy to make, nutritious and gives me so much energy! I can't promise you James Franco but I can promise you will love Nice Cream!

Nice Cream Recipe:

3 Frozen Bananas
5 Dates
Splash of Water

Blend all ingredients to desired smooth ice-cream consistency.  Top with your faves! I topped mine with bananas, goji berries, raspberries, strawberries and raw coconut flakes!
